In 2020, life threw us a curveball when my wife was diagnosed with cancer. As a father of three young kids, I suddenly found myself taking on more, while balancing work, remote learning, and the daily demands of cooking for my family - all against the backdrop of COVID lockdowns. Like many parents, I leaned heavily on quick, convenient meals - frozen french fries and chicken nuggets became household staples. They were a lifeline during the chaos and, to this day, remain family favourites.
A WAKE-UP CALL
2021
By 2021, with my wife thankfully in remission, we knew it was time to take charge of our health, starting with the food on our plates. French fries were non-negotiable in our home, but I couldn't ignore the fact that nearly every option was made with seed oils-ingredients increasingly linked to inflammation and other health risks.
Discovering Beef Tallow
2022
Cutting out french fries entirely wasn't an option (let's be honest, for the kids or me), so I started searching for a healthier alternative. That's when I rediscovered beef tallow - the natural fat that McDonald's famously used to fry their iconic fries back in the '80s. Not only is beef tallow healthier, but it also brings out a richer, more satisfying flavour - without the inflammatory effects of seed oils.
From Family Favourites to a Larger Vision

My kids, especially my youngest, adore french fries. I wanted to feel good about the fries I was serving them, but every "healthier" store-bought option still relied on seed oils. So, in 2023, I decided to take matters into my own hands - literally - and started making frozen french fries at home using beef tallow. What started as a solution for my family sparked an idea I couldn't ignore.
