What is beef tallow?

Beef tallow is simply rendered beef fat—a natural cooking fat with a long history in kitchens around the world. It’s made by gently heating beef fat to separate out impurities, resulting in a pure, shelf-stable fat. We use only minimally processed beef tallow in our products, ensuring top quality and taste.

Why do you use beef tallow instead of vegetable oils? 

There’s no shortage of fries cooked in vegetable oils, but we believe in offering a better alternative. Research suggests that vegetable oils degrade under high heat, producing byproducts like acrylamides and HNE (4-Hydroxy 2-Nonenal), which may contribute to inflammation. Beef tallow, on the other hand, is more stable at high temperatures, making it a cleaner option for cooking. Plus, it tastes fantastic!

Does your product have any certifications?

Currently, our products are not certified, but we strictly follow CFIA guidelines for labeling. Our fries are labeled as:

If you're not certified as gluten free, how can you ensure the product is gluten free?

Our fries contain only three simple ingredients: potatoes, beef tallow, and sea salt—none of which contain gluten. While our facility is not certified as allergen-free, we take rigorous steps to mitigate any risk of cross-contamination. Here’s a few things we do to ensure the safety and quality of our fries:

We maintain a strict cleaning and sanitizing regimen before, during, and after each shift to minimize cross-contamination risks.

  • No gluten-containing products are used in our workflow, and we ensure strict segregation of any processes involving gluten elsewhere in our facility.
  • Our equipment, including fryers and tallow-handling tools, is dedicated exclusively to our production lines.
  • We operate during shifts that are isolated from any gluten-related production.
  • Periodic gluten testing is conducted on our final product to provide additional reassurance.

We are exploring third-party gluten-free certification, a thorough process that evaluates not just ingredients but also facility practices. While this certification takes time, you can trust that we go above and beyond to deliver a safe, delicious product.

Where do you source your potatoes?

We’re proud to source our premium russet potatoes from local distributors, ensuring they are Ontario-grown. This approach supports local farmers and guarantees a high-quality product for our customers. We're scaling, and in time we expect to source directly from Ontario, if not Canadian farms.

Is your beef tallow from grass fed cattle?

Our beef tallow comes from a trusted Canadian rendering company, which primarily relies on suet sourced from Canadian farms. While the tallow is not specifically categorized as grass-fed, it is carefully filtered and crafted to meet the highest standards of quality, ensuring great taste and nutritional integrity.

What does grass fed and grass finished mean?

Being grass fed and grass finished are descriptions of what cows are fed during their life. If you're looking for the purest form, you really need to ensure it's 100% grass fed, and 100% grass finished and open pasture raised. This tallow is difficult to find in scale and at a reasonable price point. The significant majority of cows in Canada (Ontario) are pasture raised and grass-fed (silage/forage in winter) until they're about 14 months. The difference is in the "finishing", where they could be fed corn, grains, grass and/or a combination therein.

Why should I make the change to beef tallow, unless it's 100% grass fed and finished?

The difference in the 100% grass fed/finished beef tallow and those that are meaningful, for instance the 100% grass fed and finished may have half polyunsaturated fats (i.e. omega-6 fatty acids) and a more paletable omega-3 to omega-6 ratio. However, it's relatively insigificant to the reduction that either option provides to seed oils (vegetable oils such as corn oil, soy oil, canola/rapeseed oil, sunflower oil, etc). It took us 50+ years to get to the state where seed oils are in every bit of our foods and it'll take time to get to a more natural state.

DELIVERY

Where do you deliver?

We currently deliver within the Greater Toronto Area (GTA), Kitchener-Waterloo, London, Hamilton, St. Catherins, Niagara-Falls, Barrie and Whitby areas using reliable courier services. For deliveries in the city of Toronto and Missisauga, we are providing free delivery. But for external areas, we are requiring a minor upcharge on freight.

If you’re outside our local delivery zones, we're also delivering to Southern Ontario via temperature controlled vehicles for an extra fee.

All orders must be processed approximately 2 business days prior to delivery.

We're exploring options with SKIP and UBEReats for real time delivery within a 25km radius of our facility.

How does delivery work?

We make delivery simple and efficient! Our deliveries are made before 5pm on the delivery days, handled by trusted couriers. For weekly order aggregation, our schedule is:

We aggregate our orders weekly as follows:

  • Tuesday
  • Wednesdays (For Niagara Falls area)
  • Friday

Once your order arrives, please place it in the freezer immediately unless you plan to cook it right away.

Does someone need to be there to accept my delivery?

Yes, absolutely! Our products are crafted to be the best, and to ensure they arrive in perfect condition, they need to be kept frozen. That’s why we require someone to be available at the delivery location to receive your order.

Our direct to consumer packages come with insulating liners and cooling packs which we have tested to hold freezing temperatures (at room temp) for up to 10 hours.

What if no one is available to receive the delivery?

We’ve designed our delivery process to be as smooth as possible. When placing your order, we ask for a contact phone number and clear delivery instructions. If no one is available when our driver arrives, they will try to reach the provided contact. If needed, they’ll also contact our team at Tallow & Fries, and we’ll attempt to reach you as well.

If we’re unable to connect, the driver will leave your order in a safe location at the delivery address since frozen products cannot be returned. While we always strive for a successful delivery, we encourage you to ensure someone is available to receive your order so your fries arrive in peak condition.

ORDER POLICY

How far ahead should I place my order?

We recommend placing your order at least 48 hours before your desired delivery date. Need it sooner? Reach out to us via email or phone, and we’ll do everything we can to accommodate you.

How do cancellations work?

We understand that plans change! You can cancel your order anytime up to 24 hours before your delivery date for a guaranteed refund. If you cancel within the 24 hours of delivery, we'll do our best to cancel the delivery but we cannot guarantee this, particularly if the courier has already been assigned.

What if I need to change my order?

We'll accept order amendments as long as the order amendment is greater than 48 hours before the delivery date. If you ordered within that timeframe, give us a call to see if we can help changing your order.
